Argentinian Chicken and Cashew Vegetable Stew

The following recipe can be increased by doubling the ingredients list. 

Equipment:

  • 1 Dutch oven 
  • cooking tongs 

Ingredients:

  • 1 lb chicken. 
  • 2 Tbsp Chimichurri spice 
  • 1/2 tsp Salt 
  • 1/2 tsp Black pepper 
  • 1/2 cup Cashew halves raw 
  • 4 Tbsp Cashew Powder 
  • 2 Tbsp Olive oil for cooking 
  • 6 oz Tomato paste 
  • 2 qt Chicken stock 
  • 1/2 Yellow Onion 
  • 1/4 Green Bell Pepper 
  • 1/4 Red Bell Pepper 

Instructions:

  • Cut chicken into 1inch square pieces.  And place into a small bowl and season chicken with Chimichurri spice, salt, and pepper. 
  • In another bowl, soak the raw cashews in water. 
  • Julienne, the Onion, Green, and Red bell peppers set aside. 
  • Heat a Dutch oven, add olive oil, and sear chicken until you can cut it in half and have a white center.  Remove and set aside. 
  • Add Tomato paste, Cashew powder, and Chicken stock in the same pot and stir until tomato paste and Cashew powder have dissolved.   
  • Add onions, green and red peppers, and chicken.  Cover with a lid and cook for 1 hour. 
  • Add cashews halves.  Let simmer for about 10 more minutes, then serve.
