Easy Garlic Dill Cashew Sauce


  • 1 cup raw cashews soaked in boiling water for one hour 

  • 1 tbsp chopped fresh dill 

  • 1 large clove of garlic pressed or grated 

  • 2 tbsp white wine vinegar 

  • 1 tsp maple syrup 

  • 1/4 tsp black pepper 

  • 1/2 tsp salt + more to taste


  • Begin by draining cashews, but reserving soaking liquid. Blend the cashews in a high-speed blender with a little bit of the soaking water added at a time, until you reach the consistency of yogurt. 

  • Scrape out of the blender into a bowl and add chopped dill, pressed garlic, white wine vinegar, maple syrup, and salt + pepper to taste.
