1 cup raw cashews soaked in boiling water for one hour
1 tbsp chopped fresh dill
1 large clove of garlic pressed or grated
2 tbsp white wine vinegar
1 tsp maple syrup
1/4 tsp black pepper
1/2 tsp salt + more to taste
Begin by draining cashews, but reserving soaking liquid. Blend the cashews in a high-speed blender with a little bit of the soaking water added at a time, until you reach the consistency of yogurt.
Scrape out of the blender into a bowl and add chopped dill, pressed garlic, white wine vinegar, maple syrup, and salt + pepper to taste.
