UK Recipe - Cashew Bread Pudding
Ingredients:

Blender

1 large loaf of bread (cubed and left covered on the counter overnight)

2 eggs

2 1/2 cups Cashew Milk

2 tsp Vanilla extract

1 tsp Orange Zest
-
2 Tbsp Fresh Orange Juice

3 tsp Cinnamon
-
1/4 tsp Ground Ginger

1/8 tsp Nutmeg

1/2 cup Crushed Cashews
-
1/2 - 1 cup Raisins
Icing:

1/4 cup-Soaked Cashews (soak overnight)

1 Tbsp Maple Syrup
-
1/4 cup Cashew Milk
-
1 - 2 cups Powdered Sugar
Instructions:

The night before, cut the crust off, slice your loaf of bread into cubes, and place it in a large bowl. In another bowl, add the 1/4 cup Cashews and cover with water. Then leave both bowls covered on the counter overnight.

Preheat oven to 350 F. Zest the Orange before juicing.

Combine cashew milk, vanilla, spices, orange juice, zest, and eggs in a blender until very smooth.

Add the mixture from the blender to a large bowl and add cubed bread, raisins, and crushed cashews; stir gently to get everything coated. Allow mixture to soak for 10 minutes. Transfer to a large baking dish. Bake for 1 hour.

While the bread pudding is baking, drain soaked cashews, then combine all ingredients for the icing in a blender. Blend on high until smooth.
Serve warm with a drizzle of icing! Or you can serve this as a dessert with ice cream.
