5 cups of cashew nuts, roasted and coarsely chopped
5 cups of all-purpose flour
1 cup of sugar
1/2 cup of unsalted butter, softened
2 large eggs
1 teaspoon of vanilla extract
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1/2 cup of sour cream
Zest of 1 lemon
Powdered sugar for dusting (optional)
Method:
Preheat your oven to 350°F (175°C).
Take a bow. Mix flour, baking powder and salt in this bowl.
Take another bowl. Beat butter and sugar and make the mixture light and fluffy.
Add eggs one by one. Beat every time. Finally, mix vanilla and lemon zest in the mixture.
Now combine the dry mixture with this butter mixture. Make sure you add them together slowly. Combine them well.
Fold in the roasted cashews and sour cream and mix until evenly distributed.
Grease a pie dish. Now add the mixture into this dish to bake it.
Bake for 35-40 minutes. Insert a toothpick into the pie. If it comes out clean, that means your pie is ready. Otherwise, bake for further 5 to 10 minutes.
Allow the pie to bake for some time.
Once cooled, dust with powdered sugar if desired, slice, and serve.
