Russian Recipe - Cashew Pie


  • 5 cups of cashew nuts, roasted and coarsely chopped
  • 5 cups of all-purpose flour
  • 1 cup of sugar
  • 1/2 cup of unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of sour cream
  • Zest of 1 lemon
  • Powdered sugar for dusting (optional)


  • Preheat your oven to 350°F (175°C).
  • Take a bow. Mix flour, baking powder and salt in this bowl.
  • Take another bowl. Beat butter and sugar and make the mixture light and fluffy.
  • Add eggs one by one. Beat every time. Finally, mix vanilla and lemon zest in the mixture.
  • Now combine the dry mixture with this butter mixture. Make sure you add them together slowly. Combine them well.
  • Fold in the roasted cashews and sour cream and mix until evenly distributed.
  • Grease a pie dish. Now add the mixture into this dish to bake it.
  • Bake for 35-40 minutes. Insert a toothpick into the pie. If it comes out clean, that means your pie is ready. Otherwise, bake for further 5 to 10 minutes.
  • Allow the pie to bake for some time.
  • Once cooled, dust with powdered sugar if desired, slice, and serve.
