Colombian Cream of Cashew Soup

Ingredients  

  • 32 oz chicken stock 
  • 8 ounce milk 
  • 150 grams salted cashews (chopped) 
  • Salt to taste 
  • Black pepper to taste  
  • 2 Tbs butter  
  • 3 Tbs flour  
  • 3 Tbs chopped onions  
  • 3 Tbs chopped celery 

Instructions  

  1. Melt butter in a saucepan over medium heat.  
  2. Sautee the chopped onions and celery in the butter for around 5 minutes.  
  3. Add the flour. Stir and cook for 2 minutes.  
  4. Add the chicken stock and milk along with the chopped cashews. Bring the liquid to a boil.  
  5. Season with salt and black pepper.
