Canada Recipe - Chicken Cashew Fricot

Ingredients:  

  • 50 grams raw cashew nuts 
  • 2 to 3 pounds while chicken 
  • 1 chopped onion 
  • 5 chopped carrots 
  • 6 potatoes cut into cubes 
  • Salt to taste 
  • ½ tsp ground black pepper 
  • 2 tsp dried savory  
  • 1 Tbs butter  

Instructions: 

  1. Cut the chicken into pieces. Wash and pat dry. 
  2. Melt the butter in a non-stick wok. Add the onions and sauté for 4 to 5 minutes. Add the chicken till it turns white.  
  3. Add enough water that covers the chicken. Simmer for 30 minutes.  
  4. Add the vegetables along with salt, pepper and savory. Cook till the vegetables are tender. Add the cashews and cook for a further 2 to 3 minutes.
