Soak thecashew nuts in a cup of water for about half an hour. Drain and puree in a blender till a smooth paste has been formed.
Mix the cashew paste with the tomato basil sauce and set aside for later use.
Season the chicken with salt and pepper.
Roll each piece of chicken in flour. Coat with beaten egg and then roll in bread crumbs till well coated.
Heat olive oil over medium flame in non-stick pan. Fry both sides of the coated chicken breasts till the crumbs turn crispy and brown.
Place the fried chicken in an ovenproof dish lined with foil. Pour the cashew and tomato basil sauce evenly over each piece. Sprinkle the shredded mozzarella and parmesan cheese.
Place the dish in the preheated oven and bake the chicken till the cheese melts and turns brownish.
Serve the delicious cashew parmigiana chicken with pasta.
