Australian Recipe - Cashew Chicken Parmigiana


  • 4 pieces chicken breast thinly sliced 
  • 100 grams cashew nuts  
  • 2 cups all-purpose flour  
  • 2 cups roasted panko bread crumbs  
  • 4 large eggs 
  • 1 tsp salt  
  • 1 tsp coarsely ground black pepper 
  • Olive oil for frying  
  • 1 cup shredded Mozzarella cheese  
  • 1 cup parmesan cheese shavings  
  • 12 Oz tomato and basil sauce  


  • Preheat the oven to 400 F 
  • Soak the cashew nuts in a cup of water for about half an hour. Drain and puree in a blender till a smooth paste has been formed. 
  • Mix the cashew paste with the tomato basil sauce and set aside for later use.  
  • Season the chicken with salt and pepper. 
  • Roll each piece of chicken in flour. Coat with beaten egg and then roll in bread crumbs till well coated.  
  • Heat olive oil over medium flame in non-stick pan. Fry both sides of the coated chicken breasts till the crumbs turn crispy and brown.  
  • Place the fried chicken in an ovenproof dish lined with foil. Pour the cashew and tomato basil sauce evenly over each piece. Sprinkle the shredded mozzarella and parmesan cheese. 
  • Place the dish in the preheated oven and bake the chicken till the cheese melts and turns brownish.  
  • Serve the delicious cashew parmigiana chicken with pasta.
