Brazilian Acai Bowls with Cashew Granola

Ingredients:

  • Parchment Paper 
  • Blender 
  • 1 1/2 cups Old Fashion Oats 
  • 1 cup raw cashews chopped 
  • 1/2 tsp sea salt 
  • 1/4 cup coconut oil 
  • 1/4 cup honey 
  • 1/3 cup maple syrup 
  • 1 tsp vanilla extract 
  • 1/2 tsp cinnamon 
  • 1/2 cup unsweetened finely shredded coconut 
  • 4 frozen acai packs 
  • 2 bananas 
  • 1 cup Cashew milk 

Instructions 

  1. Preheat the oven to 325 degrees F. 
  2. Combine the oats, cashews, shredded coconut, and salt in a large bowl. 
  3. Whisk together the coconut oil, honey, maple syrup, cinnamon, and vanilla in a medium heat-proof bowl.  Heat for 30 seconds in the microwave until the coconut oil is melted and the mixture is well-combined. 
  4. Pour the oil mixture over the oats and fold them together. Spread granola on a parchment-lined baking sheet in an even layer and bake for about 10 - 15 minutes or until golden brown.  Remove from oven and allow to cool in the pan. 
  5. Meanwhile, combine the acai, banana, and cashew milk in a blender and puree until smooth. 
  6. Divide the acai mixture between 2 bowls and top with the granola. Serve the Brazil famous dish Brazilian Acai Bowls with Cashew Granola
